Gongura Chutney | Pulichakeerai Thokku in Tamil( description in English)

Spicy and tasty chutney that goes well with rice, rotis, idly or dosa. Can be stored for more than 10 days when refrigerated.
Clean and wash the gongura leaves.I have used 1 big bunch. In a pan add 4 tsp of Gingely oil, add 15 red chillies and 1 tsp of hing powder, roast and remove. Then add the leaves and little more oil and fry the leaves until it becomes very soft. Cool and grind red chillies and add a small lemon sized tamarind, requried salt and fried leaves into a paste. Then again heat 3 tbsp of oil in a pan, add a tsp of mustard seeds and 2 red chillies. Once it splutters, add the ground paste and fry well till it absorbs all the oil.Remove from flame, cool and store it in an air-tight container.
